Eppure sono preziosissimi per la nostra salute e quella del nostro ecosistema, oltre ad essere i protagonisti delle tavole di settembre e ottobre. Conosciamoli meglio.<\/p>\n<h2>Cosa sono i funghi: un identikit<\/h2>\n<p>I funghi sono organismi viventi antichissimi, <a href=\"https:\/\/www.focus.it\/scienza\/scienze\/i-funghi-popolano-la-terra-da-1-miliardo-di-anni?\" target=\"_blank\" rel=\"noopener noreferrer\">tra i pi\u00f9 antichi del pianeta<\/a>. La <strong>primissima classificazione<\/strong>, risalente a <strong>Linneo<\/strong>, li cataloga come <strong>piante<\/strong>; dobbiamo attendere il <strong>1817<\/strong> perch\u00e9 <strong>Nees<\/strong> per primo definisse il<strong> regno dei funghi<\/strong> come categoria a s\u00e9 stante. Ancora oggi, alcuni esemplari sono<strong> di classificazione incerta<\/strong> e ancora oggi sollevano vivaci dibattiti tra studiosi.<\/p>\n<p>Comunque sia, questi organismi sono estremamente variabili in quanto a dimensioni, complessit\u00e0 e tipo di riproduzione, ma hanno tutti in comune:<\/p>\n<ul>\n<li>Il fatto che si nutrono di sostanze create da altri organismi (a differenza delle piante, che si fabbricano da sole il nutrimento)<\/li>\n<li>la mancanza di tessuti differenziati e di elementi conduttori (come i vasi sanguigni negli animali)<\/li>\n<\/ul>\n<p>[\/vc_column_text][\/vc_column_inner][\/vc_row_inner][vc_custom_heading uncode_shortcode_id=&#8221;732489&#8243;]<\/p>\n<blockquote><p>Una prima, notevole differenza tra funghi \u00e8 tra <strong>organismi unicellulari e pluricellulari<\/strong>: esistono funghi di tutte le dimensioni e complessit\u00e0. Ad esempio, la <em>Botrytis Cinerea <\/em>\u00e8 un fungo molto piccolo ma estremamente utile nella pratica vinicola: \u00e8 proprio grazie ad essa che si possono produrre, in determinati contesti, i vini muffati.<\/p><\/blockquote>\n<p>[\/vc_custom_heading][\/vc_column][\/vc_row][vc_row row_height_percent=&#8221;0&#8243; overlay_alpha=&#8221;50&#8243; equal_height=&#8221;yes&#8221; gutter_size=&#8221;3&#8243; column_width_percent=&#8221;100&#8243; shift_y=&#8221;0&#8243; z_index=&#8221;0&#8243; uncode_shortcode_id=&#8221;269074&#8243;][vc_column width=&#8221;1\/1&#8243;][vc_single_image media=&#8221;210&#8243; media_width_percent=&#8221;100&#8243; media_ratio=&#8221;two-one&#8221; uncode_shortcode_id=&#8221;332783&#8243;][vc_row_inner limit_content=&#8221;&#8221;][vc_column_inner width=&#8221;1\/2&#8243;][vc_column_text text_lead=&#8221;yes&#8221; uncode_shortcode_id=&#8221;179126&#8243;]Infine, <strong>l&#8217;alimentazione<\/strong>: come abbiamo gi\u00e0 detto, tutti i funghi sono <strong>eterotrofi<\/strong>, ovvero ricavano le sostanze nutritive da altri organismi. Il modo in cui si procurano queste sostanze per\u00f2 cambia: i funghi possono essere:<\/p>\n<ul>\n<li><strong>Saprofiti: <\/strong>si nutrono di sostanze non viventi, di origine vegetale o animale. Sono i demolitori e i pulitori dell&#8217;ambiente: grazie a loro, le sostanze non pi\u00f9 utili vengono smaltite, lasciando spazio per il resto.<\/li>\n<li><strong>Parassiti: <\/strong>per nutrirsi hanno bisogno di un altro essere vivente, a cui consumano tutte le risorse portandolo alla morte. Alcuni di questi, dopo aver ucciso la vittima continuano a nutrirsene, cambiando il loro comportamento in <strong>saprofitismo.<\/strong><\/li>\n<li><strong>Simbionti: <\/strong>in questo caso si crea un circolo virtuoso tra ospite e ospitanti. Ad esempio, in alcune orchidee un fungo cede alla piantina zuccheri essenziali per la sua crescita. Anche i licheni sono composti da un fungo e un&#8217;alga che vivono in simbiosi. Molte specie commestibili, come i <strong>funghi porcini<\/strong>, sono simbionti.<\/li>\n<\/ul>\n<p>[\/vc_column_text][\/vc_column_inner][vc_column_inner width=&#8221;1\/2&#8243;][vc_single_image media=&#8221;212&#8243; media_width_percent=&#8221;100&#8243; media_ratio=&#8221;two-three&#8221; uncode_shortcode_id=&#8221;173592&#8243;][\/vc_column_inner][\/vc_row_inner][vc_column_text text_lead=&#8221;yes&#8221; uncode_shortcode_id=&#8221;166246&#8243;]Una piccola curiosit\u00e0: se ci dicono funghi, la prima cosa a cui pensiamo \u00e8 un <strong>appetitoso porcino con il suo gambo e il cappello scuro.<\/strong> In realt\u00e0, questo \u00e8 solo il <strong>corpo fruttifero<\/strong>, ovvero la parte che diffonde le spore. Il vero e proprio fungo \u00e8 composto da strutture filamentose, dette <strong>ife<\/strong>, che insieme compongono il <strong>micelio: <\/strong>un reticolo immenso che si espande e che permette ai funghi di nutrirsi e proliferare.<\/p>\n<p><strong>Tutti i funghi,<\/strong> indipendentemente dalla loro alimentazione, svolgono un ruolo essenziale per il nostro pianeta e l&#8217;ecosistema: mentre i <strong>simbionti <\/strong>sono essenziali per la vita delle specie alle quali si legano, i <strong>saprofiti <\/strong>degradano sostanze che se presenti in quantit\u00e0 eccessive sarebbero dannose e i <strong>parassiti <\/strong>sono preziosi per la selezione naturale.[\/vc_column_text][vc_custom_heading text_italic=&#8221;yes&#8221; uncode_shortcode_id=&#8221;400639&#8243;]<\/p>\n<blockquote>\n<h2>In pratica, questa forma di vita \u00e8 preziosa per <strong>l&#8217;equilibrio dell&#8217;ecosistema, <\/strong>ripulendolo e favorendo la selezione della specie.<\/h2>\n<\/blockquote>\n<p>[\/vc_custom_heading][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/1&#8243;][vc_single_image media=&#8221;204&#8243; media_width_percent=&#8221;100&#8243; uncode_shortcode_id=&#8221;201647&#8243;][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/1&#8243;][vc_column_text uncode_shortcode_id=&#8221;214634&#8243;]<\/p>\n<h2>Dove trovare i funghi?<\/h2>\n<p>Arriviamo nel vivo della questione, ovvero come cercarli, dove raccoglierli, come pulirli e distinguere i funghi velenosi da quelli che possiamo mangiare.<\/p>\n<p>\u00c9 utile cercarli nei boschi all&#8217;incirca tra i 700 e i 1300 metri d&#8217;altezza, in aree umide; inoltre, \u00e8 sempre meglio andare in periodi caldi ma piovosi. Per questo motivo i mesi di settembre e ottobre sono ideali.<\/p>\n<p>Per raccoglierli, l&#8217;importante \u00e8 sempre il<strong> rispetto della loro funzione: <\/strong>raccogliere solo funghi di buone dimensioni, evitando quelli pi\u00f9 piccoli e ancora in crescita, e <strong>staccarli delicatamente<\/strong>, per non rovinare il micelio sottostante. Ci sono <strong>alcuni giorni in cui \u00e8 vietata la raccolta<\/strong> in varie aree e comunque ci sono dei <strong>quantitativi massimi di funghi che si possono raccogliere: <\/strong>bisogna quindi per sicurezza verificare le norme dell&#8217;area dove si vuole andare. Per esempio, <a href=\"https:\/\/servizi.regione.piemonte.it\/catalogo\/tutela-dei-funghi-epigei-spontanei\" target=\"_blank\" rel=\"noopener noreferrer\">qui ci sono le norme relative alla raccolta di funghi in Piemonte.<\/a><\/p>\n<p>Una volta raccolti, con il coltellino da funghi si d\u00e0 una pulita sommaria e poi possiamo ricominciare il nostro cammino: <strong>\u00e8 importante mettere il raccolto in un recipiente areato, <\/strong>in maniera tale che possano continuare a spargere spore mentre camminiamo per il bosco.[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/2&#8243;][vc_single_image media=&#8221;231&#8243; media_width_percent=&#8221;100&#8243; media_ratio=&#8221;two-three&#8221; uncode_shortcode_id=&#8221;400589&#8243;][\/vc_column][vc_column width=&#8221;1\/2&#8243;][vc_column_text uncode_shortcode_id=&#8221;158831&#8243;]A questo punto si solleva un&#8217;altra questione: <strong>una volta raccolti, come capire se sono velenosi?<\/strong><\/p>\n<p><strong>Sfatiamo qualche mito: <\/strong>non \u00e8 vero che i funghi su cui ci sono lumache o altri animali sono per forza commestibili. Ci\u00f2 che ad una specie non d\u00e0 nessun fastidio, per altre pu\u00f2 essere mortale. Idem per la credenza che <strong>le specie con la parte inferiore spugnosa non siano velenosi<\/strong>: ad esempio, il <strong>Porcino Malefico<\/strong>, molto pericoloso per la nostra salute, assomiglia moltissimo al cugino commestibile &#8211; parte inferiore spugnosa inclusa!<\/p>\n<p>Per precauzione andrebbero evitati tutti i funghi di colore rosso e in generale di colori brillanti: detto questo, alcune specie velenose sono molto simili a quelle buone! Se si hanno dubbi, \u00e8 sempre meglio portarli negli <strong>appositi punti nelle ASL, <\/strong><a href=\"https:\/\/dentrolanotiziabreak.it\/servizio-di-controllo-funghi-asl-at\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>ad esempio nell&#8217;ASL di Asti<\/strong><\/a><strong>, dove li controlleranno gratuitamente.<\/strong>[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/1&#8243;][vc_column_text uncode_shortcode_id=&#8221;736516&#8243;]<\/p>\n<h2><strong>E i funghi porcini?<\/strong><\/h2>\n<p>I porcini sono molto apprezzati e richiesti. E sono anche molto preziosi: questo perch\u00e9 <strong>non si possono coltivare. <\/strong>A differenza di altri tipi di funghi freschi, come gli <em>champignon<\/em> o gli <em>shiitake, <\/em>i porcini sono <strong>simbionti; <\/strong>hanno quindi bisogno di un rapporto stretto con altri esseri viventi per crescere. <strong>Una simbiosi \u00e8 un legame raro, prezioso, che ha bisogno di condizioni uniche per svilupparsi<\/strong>: non si pu\u00f2 coltivare in una serra o far crescere. Si sviluppa spontaneamente, senza costrizioni. Per questo motivo <strong>non \u00e8 possibile replicare a casa questa delicata situazione: <\/strong>i porcini sono un piccolo tesoro della terra, da godere nella quantit\u00e0 che la Natura vuole concederci.[\/vc_column_text][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/1&#8243;][vc_single_image media=&#8221;223&#8243; media_width_percent=&#8221;100&#8243; media_ratio=&#8221;two-one&#8221; uncode_shortcode_id=&#8221;456044&#8243;][\/vc_column][\/vc_row][vc_row][vc_column width=&#8221;1\/2&#8243;][vc_column_text uncode_shortcode_id=&#8221;137930&#8243;]Un tesoro non solo per il gusto e la rarit\u00e0, ma anche per i <strong>valori nutrizionali: <\/strong>i funghi porcini contengono infatti pochissime calorie ma sono ricchi di vitamine, tra cui la Vitamina D.
